Mini Chicken Liver Pâté

A smooth, spreadable liver pâté in tiny portions — intensely tasty, so a little goes a long way.

🧺 Ingredients

  • 100 g fresh chicken livers
  • 2 tbsp water or unsalted chicken stock
  • 1 tsp plain cooked pumpkin (optional, to firm the texture)

👩‍🍳 Method

  1. Rinse the chicken livers and trim away any sinew.
  2. Simmer gently in water until fully cooked through, about 8–10 minutes.
  3. Drain, then blend the cooked livers with the water or stock until smooth.
  4. Blend in the pumpkin if using, for a firmer set.
  5. Spoon into a small container, chill until firm, and serve in pea-sized amounts.
Nutrition: Chicken liver is a powerhouse of naturally occurring iron, vitamin A and B vitamins, and its strong flavour makes even a tiny smear a high-value reward for tempting a reluctant eater.

📝 Notes

Liver is very rich in vitamin A, which is fat-soluble and builds up in the body, so this must be a rare treat in tiny amounts — too much liver over time can cause vitamin A toxicity. Cook the livers thoroughly and add no salt, onion or garlic. Keeps 3 days in the fridge or freeze in portions.
