Beef & Pumpkin Hearty Stew

🧺 Ingredients

  • 150 g lean stewing beef, diced small
  • 2 tbsp plain cooked pumpkin puree
  • 300 ml plain water
  • 1 tbsp finely chopped fresh parsley (optional)

👩‍🍳 Method

  1. Put the diced beef and water in a pan and bring to a gentle simmer.
  2. Cook slowly for around 35 minutes until the beef is very tender.
  3. Shred or finely chop the cooked beef and return it to a little of the cooking liquid.
  4. Stir through the pumpkin puree and parsley to make a soft, spoonable stew.
  5. Cool to room temperature and serve a small spoonful as a topper; refrigerate the rest for up to two days.
